An important part of supply process were the Air Force Veterinary personnel that were assigned to the Cold Stores in Metz and Paris, and all others, I believe. They inspected all Food Stuffs arriving at the Cold Stores plants and periodicaly the goods in storage. If they didn't determine that everything was in accord with health specifications the shipments were rejected on the spot. I recall one time during a spot check of outgoing shipments, when a truck load of Iceberg Lettuce was ready to leave the plant for a trip to Orleans it was stopped and debate began as whether the lettuce was fit for humans. In the course of discussion the Army truck driver, who was anxious to get going told "Bennie" Bensink, the inspecting Veterinarian, "Looks, good to me. You put a little salt on it and I would eat it." Of course both his offer and the lettuce were rejected.
